How many times have we heard the phrase "everything from the pig can be eaten? Well, this is the time to check it out. In Azuelo, a small village 30 kilometres from Estella-Lizarra, near the border with Álava, they celebrate the "slaughter of the pig" in the cold winter months. It is a ritual passed down through generations of mothers to daughters over the years, one in which these pleasant animals are the undisputed 'stars' of the festivity, even though they would rather not be...
In this tribute, which is a good excuse to get family and friends around a good meal, you will enjoy snacks, lunches and dinners based on tasty chorizo, morcilla (black sausage), tocino (rind) or ham. Mmmm...
