Although they can be added as a vegetable and even stuffed, the best way to appreciate their delicate flavour is by themselves
. In season (early spring
) they are served fresh. Either way they are prepared by peeling and then boiling in water. They can be served cold with mayonnaise or vinaigrette, and are sometimes accompanied by hard-boiled eggs. They are sold canned year round and classified by thickness (the cans usually indicate the approximate number of asparagus contained).
