Although they can be added as a vegetable and even stuffed, the best way to appreciate their delicate flavour is by themselves. In season (early spring) they are served fresh. Either way they are prepared by peeling and then boiling in water. They can be served cold with mayonnaise or vinaigrette, and are sometimes accompanied by hard-boiled eggs. They are sold canned year round and classified by thickness (the cans usually indicate the approximate number of asparagus contained).

  • 1 cebolla
  • 1 huevo duro
  • aceite de oliva

Asparagus is usually served with mayonnaise or a vinaigrette sauce.

The vinaigrette is prepared by chopping onions and boiled eggs into very small pieces and mixing them with olive oil and vinegar (or lemon) to taste.
