Pyrenean gastronomy

The geographical diversity of Navarre brings with it a great variety of products, from the dairy products and game of the Pyrenees, through the lamb and wines of the central area, to the famous green vegetables of the plains. Although all of these are present all over the region, the Pyrenean kitchen has its own specialities: menus that use game or fungi as basic ingredients, delicious T-bone steaks, cider, cheeses with 'Roncal' or 'Idiazábal' D.O. (Designation of Origin), dairy-based desserts like traditionally-made junket or cream ‘canutillos’ (brandy snaps), fruits such as kiwi or exquisite home-made chocolates.
