The salmon of the Bidasoa is highly appreciated but not often found on Navarrese menus. Salmon fishing is strictly limited and, if you have the opportunity to taste it, you should certainly not miss it. There are various ways to cook it although the most common is grilled over hot coals with sautéed onions, or marinated. Smoked salmon is usually accompanied by asparagus and toast.
