Navarrese cuisine has traditionally taken advantage of locally-available food and the abundant wild mushrooms found in its forests and meadows are always featured in its gastronomic specialities. The wild mushrooms are first sautéed with chopped garlic and then ham shavings and eggs are added and stirred until the egg is cooked. The result is a dish of delicate texture that melts in the mouth.
