Costrada de Aoiz



We are going to reveal the recipe by Granny Braulia, from the "casa del hornero", whose delicious costrada was well-known in the town of Aoiz:

Prepare the paste in a bowl, beating the egg yokes, sugar, lard and anise, and add flour gradually.

To make the custard, boil ¾ of a litre of milk with the cinnamon. Add sugar and gradually dilute the yokes, flour and the remaining ¼ litre of milk until it boils again.

Grease a baking tin with lard, put in half of the paste mixture, pour the custard on top and cover with the other half of the paste.

Preheat the oven and cook the dessert at 180º until the custard has curdled and the surface has browned (approx. 1 hour). Serve lukewarm.

Ingredients: For the PASTA: 10 yolks of egg, 200 gr. of sugar, 200 gr. of lard, 1 jet of anise and 5 spoonfuls of flour. For the CREAM PASTELERA: 1 liter of milk, 7 spoonfuls of sugar, 2 yolks of egg, 4 spoonfuls of flour and ½ stick of cinnamon.
