Relleno is produced all over Navarre, though the most famous product is perhaps the one from the Pamplona basin. Relleno is a white sausage
which contains egg, cooked rice, saffron, parsley, finely diced pork fat and spices instead of blood. It is stuffed into natural or artificial intestines, has a mild flavour with slight nuances and can be slightly doughy.
It is very closely linked with local village festivals and although you can buy it all year round, its natural season is winter
. It is sold fresh and eaten fried, sometimes accompanied by tomato sauce.
