This delicious variety of fan-leafed lettuce has received its designation because it is grown in the city of Tudela and surrounding municipalities. Larger than those from other regions of Spain
, it is around 10 centimetres long and is characterised by its long, thick, strong leaves, ranging in colour from the bright green of the outer leaves to the yellow of the inner ones.
The authorities have protected this indigenous, tightly-packed, tender and extremely tasty lettuce by establishing controls to ensure the seeds are not sold to other production regions. Its natural season runs from autumn to spring, although Tudela lettuce hearts are grown all year round. They are absolutely delicious with a dressing of garlic, anchovies or salmon, or served as a side dish.
