

Known as costillas, costillicas or chuletillas, lamb chops are delicious grilled over embers, usually obtained from the canes that are pruned off the vines in winter, and provide a unique flavour and aroma. They should be grilled until golden-brown and served hot, so they often come in thick earthenware dishes that maintain the heat. They are normally accompanied by roast Piquillo red peppers.
